Mustard definitely shouldn’t be lacking in a good cuisine, since it is an indispensable spice in salad dressings, great with all kind of roasted and grilled meat and of course always eaten in a good hot-dog.
We produce our mustard from yellow and black mustard seeds. Ground seeds are soaked in marinade (vinegar, sugar, salt and spices) for one day after the dry grinding and then grinded in a corundum mill into a mustard. This then acquires its unique scent and taste in the process of maturing (fermentation), which lasts 30 days.
The ratio between the yellow and the black seeds determines the sharpness of the mustard and spices and herbs give it the nobleness of scent and taste.
